Chocolate Chip Cookie Pies with Sea Salt

So I didn't think that anything could top dinner tonight, but of course I was wrong. These Chocolate Chip Cookie Pies are amazing!! Super soft in the center, but hard on the side and the added salt to the top just makes everything work. I'm a huge fan of salt on chocolate chip cookies, I mean hello chocolate and salt they're best friends in my personal opinion. These are also the perfect size and one is just enough, but hey if you have two I won't tell anyone ;). You know what's probably even better on these Vanilla Ice Cream!!! Don't worry I'll stop talking and share the recipe!


Chocolate Chip Cookie Pies with Sea Salt
35-45 minutes

Ingredients
5 tablespoons unsalted butter, divided
2 tablespoons dark brown sugar
1/4 cup light brown sugar
1/4 teaspoon vanilla extract
1/2 cup flour
1/3 cup semisweet chocolate chips
1 egg
1/4 teaspoon coarse Maldon sea salt
4 aluminum tins circular 

1. Prepare Ingredients
Preheat oven to 350. Place butter in a medium bowl and let soften at room temperature for at least 10 minutes. After 10 minutes microwave butter in a medium heatproof bowl in 10-second intervals until softened, but not melted, Use 1 teaspoon softened butter to grease insides of tins, reshaping if bent.

2. Make Cookie Dough
Add dark brown sugar and light brown sugar to medium bowl with remaining softened butter, and whisk vigorously until very pale and fluffy, about 2-3 minutes. Then, whisk in vanilla extract,1 egg, and a pinch of kosher salt to combine. Add flour and chocolate chips and stir until flour is just incorporated.

3. Assemble Cookie Pies
Divide cookie dough evenly among tins, then sprinkle a pinch of Maldon sea salt over top. (A little goes a long way)

4. Bake Cookie Pies
 Place tins on a baking sheet, and bake until cookie pies are set and light golden, about 22 minutes.

5. Plate Cookie Pies
Remove cookie pies from oven and let cool a few minutes, then carefully remove from tins. Enjoy!
